Chickpea Salad

Ingredients:

Canned chickpeas (drained and rinsed)

Cherry tomatoes

Red onion

Cucumber

Fresh parsley

Lemon juice

Olive oil

Salt and pepper

Instructions:

Combine chickpeas, halved cherry tomatoes, diced red onion, and cucumber in a bowl.

Add chopped fresh parsley.

Dress with lemon juice, olive oil, salt, and pepper.

Mix well and pack in a lunch container.
