  • 1-1.5kg tripe, cleaned and chopped
  • 1 onion, chopped
  • 1 teaspoon garlic
  • ½ green bell pepper, chopped
  • 1 beef stock cube
  • 1 tablespoon braai seasoning
  • salt to taste


  1. Clean and chop the tripe into bite size pieces.
  2. In a pot, add the tripe, onion, garlic, stock cube and water to cover.
  3. Cover and boil for an hour then add the chopped green pepper and the seasoning.
  4. Cook for another hour until the liquid is reduced, and the tripe is tender. Add salt if necessary.
  5. Serve hot
