Ingredients
- 1 whole Cornish hen, cut into individual pieces
- 2 cups (500ml) water
- 1 medium brown onion, diced
- 1 chicken stock cube, dissolved in 2 cups (500ml) hot water
- 2 tablespoon (30ml) medium curry powder salt, to taste
Method
- To a large pot, add the whole chicken and the water. Simmer over medium heat for 1 hour, stirring occasionally.
- After an hour, add the onion, liquid chicken stock, curry powder and salt. Add more water if needed, but not too much
- Lower the heat and cook for another hour, or until the chicken is tender and falls off the bone.
- Serve with creamy samp or creamy polenta
