  • 1 whole Cornish hen, cut into individual pieces
  • 2 cups (500ml) water
  • 1 medium brown onion, diced
  • 1 chicken stock cube, dissolved in 2 cups (500ml) hot water
  • 2 tablespoon (30ml) medium curry powder salt, to taste


  1. To a large pot, add the whole chicken and the water. Simmer over medium heat for 1 hour, stirring occasionally.
  2. After an hour, add the onion, liquid chicken stock, curry powder and salt. Add more water if needed, but not too much
  3. Lower the heat and cook for another hour, or until the chicken is tender and falls off the bone.
  4. Serve with creamy samp or creamy polenta
