Winner of the Best Chef – One Knife Award, Mlambo has built his reputation on dishes that combine cultural storytelling, nostalgia, and identity with a refined, modern edge. His cuisine often carries a deeper message, weaving in social commentary while remaining playful and flavour-driven.

“In the beginning, I wanted to show that traditional flavours could be cool and modern,” Mlambo explains. “Now it’s deeper. Every plate carries a story about memory, resistance, and roots — and being able to share that alongside other pioneers of African cuisine is incredibly exciting.”
