This year, we’re celebrating with a plate of creamy maize meal pap, perfectly boiled eggs, and flavour-packed boerewors — a meal that’s comforting, familiar, and deeply South African.

Try It Yourself: Creamy Pap & Boiled Egg Breakfast Bowls

Serves: 2
Prep Time: 20 minutes
Cooking Time: 35 minutes
Cost: Under R80

INGREDIENTS:

  • 560 ml (2¼ cups) water
  • 375 ml (1½ cups) milk
  • 180 ml (¾ cup) maize meal
  • 2 eggs
  • 250 g thin boerewors
  • 2 rosemary sprigs
  • Olive oil, for cooking
  • 250 ml (1 cup) sliced mushrooms
  • Salt and pepper
  • 180 ml (¾ cup) cheddar, grated

METHOD:

  1. Bring water and milk to a boil, whisk in maize meal, cover, and cook for 15 minutes, stirring occasionally.
  2. Soft-boil the eggs for 6 minutes, cool, peel, and halve.
  3. Roll boerewors into spirals, skewer with rosemary sprigs, and fry in oil until cooked.
  4. In the same pan, fry mushrooms with rosemary leaves until golden.
  5. Stir cheddar into pap until melted.
  6. Divide pap into bowls, top with boerewors, eggs, and mushrooms, then garnish with rosemary.
