BASIL PESTO HASSELBACK POTATOES

Serves 4

Ingredients

  • 4 medium potatoes
  • 4 tablespoons olive oil
  • 1 tablespoon crushed garlic
  • 125g basil pesto
  • salt
  • pepper

Method

  1. Cut the potatoes into thin and even slice, but not all the way through.
  2. In a small bowl mix oil, garlic, salt, and pepper into a paste.
  3. Rub potatoes and in between the cuts to ensure they are all coated.
  4. Place in a preheated oven at 190﮿C for 90 minutes and broil for 2 minutes.
  5. Remove from the oven and baste with basil pesto while still hot.
  6. Serve and enjoy!
