TUSCAN WHITE BEAN & SAUSAGE STEW

This hearty stew builds incredible flavour as it simmers. The sausage adds richness, the beans provide a creamy texture, and simple ingredients transform into something truly satisfying. It’s a one-pot wonder that improves with time, making it perfect for letting flavours meld while you relax. Just a quick browning of the sausage and aromatics, then it’s largely hands-off simmering.

Ingredients

  • 1 tablespoon olive oil
  • 450g Italian sausage (casings removed, or crumbled)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can crushed tomatoes
  • 2 cans cannellini beans, rinsed and drained
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried oregano or Italian seasoning
  • a pinch of red pepper flakes (optional)
  • salt and black pepper to taste
  • fresh parsley or grated parmesan for serving (optional)

Method

1. Heat the oil in a large Dutch oven. Brown the sausage, breaking it up with a spoon. Remove the sausage, leaving some fat behind.

2. Add the onion and cook until softened (5-7 minutes). Stir in the garlic and cook for 1 minute.

3. Return the sausage to the pot. Stir in the tomatoes, beans, broth, oregano, and pepper flakes.

4. Bring the mixture to a gentle simmer. Reduce the heat to low, cover, and simmer for at least 30-45 minutes (or up to 2 hours), stirring occasionally.

5. Season to taste. Serve with optional parsley or Parmesan cheese and crusty bread.

2. SLOW-ROASTED SALMON WITH LEMON-DILL POTATOES

Roasting salmon slowly yields incredibly tender, flaky fish. Cooking it alongside potatoes means everything is ready at the same time on one sheet pan. Ingredients

  • 700g small potatoes, cut into 2.5cm pieces
  • 2 tablespoons olive oil, plus more for salmon

  • salt and black pepper
  • 4 (150g) salmon fillets
  • 1 lemon, thinly sliced

Method

1. Preheat the oven to 190°C (375°F).

2. On a large sheet pan, toss the potatoes with 2 tablespoons of olive oil, garlic, dill, salt, and pepper. Spread them out in a single layer.

3. Roast the potatoes for 20-25 minutes until they are softened.

4. Remove the pan from the oven. Push the potatoes to one side. Place the salmon on the pan. Drizzle the salmon with oil, season with salt and pepper, and top with lemon slices.

5. Return the pan to the oven and roast for another 12-18 minutes, until the salmon is flaky and the potatoes are tender.

6. Serve with an extra squeeze of fresh lemon juice or Broccoli (Optional).
