Quinoa and Veggie Power Bowls

Ingredients:

Cooked quinoa

Cherry tomatoes

Cucumbers

Avocado

Chickpeas

Feta cheese

Lemon vinaigrette

Instructions:

Prepare a batch of cooked quinoa.

In a lunch container, add a base of quinoa.

Top with cherry tomatoes, cucumbers, avocado slices, and chickpeas.

Sprinkle with feta cheese and drizzle with lemon vinaigrette.
