INGREDIENTS
For the honey mustard chicken:
- 4 chicken breasts, sliced in half
- 1 teaspoon Hinds Spices Chicken Spice
- 2 tablespoons olive oil
- ¼ cup honey
- 1 tablespoon wholegrain mustard
- 2 teaspoons Dijon mustard
- ⅛ teaspoon Hinds Spices Paprika
- ⅛ teaspoon Hinds Spices Cayenne Pepper
- 1 teaspoon garlic, minced
For the garlic & herb flatbread:
- 1½ cups self-raising flour
- 1 cup plain yoghurt
- 1 teaspoon Hinds Spices Aromatic Garlic & Herb
- melted butter, for brushing
- fresh coriander, chopped (for brushing & garnish)
For the butter bean salad:
- 1 can Rhodes Quality Butter Beans in Brine, drained
- 1 can Rhodes Quality Chickpeas in Brine, drained
- 1 teaspoon garlic, minced
- 1 cup red pepper, diced
- 1 red onion, finely chopped
- 1 avocado, cubed
- 1 teaspoon Hinds Spices Aromatic Garlic & Herb
METHOD
For the honey mustard chicken:
- In a large bowl, mix together Hinds Spices Chicken Spice, olive oil, honey, wholegrain mustard, Dijon mustard, garlic, Hinds Spices Cayenne Pepper, and Hinds Spices Paprika.
- Add the chicken and stir well to coat it evenly in the marinade.
- Cover and refrigerate for 30 minutes to 1 hour.
- Preheat the grill to 200°C.
- Place the chicken on the grill and cook for 6–8 minutes on each side, turning once to keep it juicy.
- Transfer to a clean plate or board, cover with foil, and let rest for 5–10 minutes before slicing.
For the garlic & herb flatbread:
- In a large bowl, combine the self-raising flour, plain yoghurt, and Hinds Spices Aromatic Garlic and Herb.
- Knead for about 8 minutes until smooth, then divide the dough into 4–6 equal balls.
- Roll each ball flat and cook in a hot pan for about 1 minute on each side, or until bubbles appear and the bread is golden.
- Brush the warm flatbreads with melted butter and sprinkle with fresh coriander.
For the butter bean salad:
- In a large bowl, combine the Rhodes Quality Butter Beans, chickpeas, garlic, red pepper, red onion, avocado, and Hinds Spices Aromatic Garlic and Herb.
- Toss gently to mix all ingredients together.
To Serve:
- Serve the grilled honey mustard chicken with the garlic and herb flatbread and the butter bean salad on the side.
