LEMON & CHILLI OIL PRAWNS

This dish is perfect for a quick and easy alfresco lunch. Serve it with a fresh green salad, some fresh bread and a glass of Sauvignon Blanc.

INGREDIENTS

  • 1 kg king prawns, defrosted and deveined
  • 4 cloves garlic, finely chopped
  • 4 tablespoons chilli oil
  • juice of ½ lemon
  • salt and pepper to taste
  • 1 tablespoon unsalted butter
  • handful of fresh coriander, roughly chopped

METHOD

  1. Heat the butter and chilli oil in a pan.
  2. Add the prawns and garlic and fry until the prawns turn pink and are cooked. This takes about 4-5 minutes.
  3. Turn the heat off and add the lemon juice, seasoning and coriander.
  4. Toss gently.
  5. Serve immediately while still hot.
