BRIE & CRANBERRY MEATBALLS WITH SPAGHETTI

Serves: 4

INGREDIENTS

For the meatballs:

  • 500g beef mince
  • 2 tablespoons oats (or breadcrumbs)
  • 2 large eggs
  • ½ cup dried cranberries, roughly chopped
  • 80g brie, cubed
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil (for frying)
  • 1 green pepper, chopped
  • spaghetti, cooked, for serving
  • fresh basil, to serve (optional)

METHOD

  1. Preheat oven to 200°C and line a baking tray with parchment paper.
  2. In a large bowl, mix together the mince, oats, eggs, cranberries, brie cubes, green pepper, salt, pepper, and garlic powder until just combined. Avoid overmixing.
  3. Shape into medium-sized meatballs and arrange on the tray.
  4. Drizzle lightly with olive oil and bake for 20–25 minutes until golden brown and cooked through.
  5. Serve the meatballs over spaghetti, and top with extra cubes of brie, cranberries, and fresh basil.
