This dish offers a unique way to start your day. And, for a busy breakfast lover like me, I appreciate that it is quick and easy to prepare.
Serves: 2–4
INGREDIENTS
- 2 tablespoons olive oil
- 4 thick breakfast sausages of your choice
- 100g back bacon or streaky bacon
- 1 large pre-made pizza base or 250g store-bought pizza dough
- 2 tablespoons barbecue sauce
- 2–4 eggs
- ½ cup mozzarella cheese, grated
- ½ cup cheddar cheese, grated
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- salt & pepper, to taste
- 1 large ripe avocado, peeled, pit removed & sliced thickly
- fresh chives, to garnish
METHOD
- Preheat the oven to 230°C.
- In a large frying pan, heat 1 tablespoon of oil over medium heat. Add the sausages and cook for 8–10 minutes, until they are evenly browned and cooked through. Remove the sausages from the pan and use a sharp knife to slice them thinly. Set aside.
- Add the bacon to the same pan and fry over medium–high heat for 4–5 minutes, or until crispy. Remove the bacon from the pan and roughly chop it, then set it aside.
- Place the pizza base on a baking tray lined with baking paper. If using store-bought pizza dough, roll it out on a lightly floured surface to your preferred thickness. Lightly brush the base with the remaining tablespoon of olive oil to add flavour and help it crisp up in the oven. Spread the barbecue sauce evenly over the pizza base, then sprinkle the mozzarella and cheddar cheeses on top.
- Arrange the cooked sausage slices, bacon, tomatoes, and onion on top of the cheese.
- Gently crack the eggs on top, spacing them evenly–season with salt and pepper.
- Place the pizza in the preheated oven and bake for 12–15 minutes, or until the crust is golden-brown, the cheese is melted, and the egg whites are set but the yolks remain runny.
- Remove the pizza from the oven. Arrange the avocado slices on top and garnish with fresh chives. Slice and serve while hot.
