CHILLI & HONEY GLAZED SAUSAGES & VEGAN FRENCH TOAST

Ingredients

  • • 8 x Fry’s Classic Sizzlers
  • • 15ml honey
  • • 2 chillis, sliced
  • • ¼ cup chickpea flour
  • • 10g parsley
  • • 5ml onion powder
  • • 5ml garlic powder
  • • 10ml turmeric
  • • 15ml smoked paprika
  • • 125ml almond milk, or milk of choice
  • • 60ml water
  • • 8 slices bread of choice
  • • 250g Porto Bellini mushrooms, quartered
  • • 1 onion, sliced
  • • 100g baby tomatoes
  • • 15ml lemon juice
  • • 100g baby spinach

Instructions

  1. Heat oil on medium-low and fry the Sizzlers for 8–10 minutes.
  2. In the last 2 minutes, add honey and chilli; toss to glaze.
  3. For the French toast, mix chickpea flour, parsley, spices, and almond milk into a smooth batter.
  4. Heat 1 tablespoon oil in a non-stick pan over medium heat.
  5. Dip bread slices in the batter and fry 3–4 minutes per side.
  6. For the mushrooms, heat 2 tablespoons oil in a hot pan.
  7. Cook mushrooms undisturbed for 4 mins, then toss with onion, salt, and pepper; cook 2–3 more minutes.
  8. Add tomatoes, spinach, and lemon juice; cook 2 more minutes until spinach wilts.
  9. Serve French toast with Sizzlers and mushrooms.
