COCONUT CHICKEN SKEWERS WITH PINEAPPLE SALSA

Ingredients

  • For the chicken skewers:
  • • ½ cup coconut milk (full-fat)
  • • zest and juice of 1 lime
  • • 1 garlic clove, grated
  • • 1 small red chilli, finely chopped (or ½ tsp chilli flakes)
  • • 1 teaspoon honey
  • • 1 teaspoon soy sauce
  • • salt and pepper to taste
  • • 500g chicken breast, cubed
  • For the pineapple salsa:
  • • 1 cup fresh pineapple, finely diced
  • • ¼ small red onion, finely chopped
  • • handful of coriander or mint, chopped
  • • juice of ½ lime
  • • 1 small red chilli, finely chopped (optional)
  • To serve:
  • • cooked jasmine rice or coconut rice
  • • toasted coconut flakes
  • • lime wedges

Instructions

  1. In a bowl, whisk together the coconut milk, lime zest and juice, garlic, chilli, honey, soy sauce, salt, and pepper. Add the chicken, toss to coat, and marinate for at least 30 minutes (overnight is best).
  2. In a small bowl, mix the diced pineapple, red onion, coriander or mint, lime juice, and chilli. Chill until ready to serve.
  3. Thread the chicken onto skewers (soaked in water for 20 minutes). Braai, grill, or pan-sear over medium-high heat until golden and cooked through (about 4–5 minutes per side). Baste with any leftover marinade during the final minute, if needed.
  4. Serve with rice, pineapple salsa, a sprinkle of toasted coconut flakes, and fresh lime wedges.
