DECONSTRUCTED BOERIE ROLL

It’s time to turn a classic boerie roll on its head. As a South African street food favourite or braai staple, it’s not exactly known for its health benefits. Boerewors flavours vary, but they all contain a fair amount of fat and additives. Add this to a white roll with slatherings of sauce and condiments, and you have a particularly unhealthy meal on your hands. But not this time; I’ve deconstructed it, for a much healthier version.

INGREDIENTS

  • 500g boerewors (low-fat variety)
  • 1 avocado, diced
  • 1 yellow bell pepper, sliced
  • 1 pack (±100g) sugar snap peas, sliced in half
  • 1½ cups chopped baby tomatoes
  • 1½ cups croutons or a few slices toasted sourdough
  • Salt and pepper to taste

DRESSING

  • ¼ cup olive oil
  • 2 tablespoons white wine vinegar
  • 2 tsp low-sugar sweet chilli sauce
  • Salt and pepper to taste

METHOD

1. Cook the boerewors on the braai or in a pan. Slice it into 1cm pieces and place in a salad bowl. Add the remaining ingredients, and toss. Season with salt and pepper.

2. Whisk together the dressing ingredients, pour over the salad, and toss.
