- 80g halloumi
- 10g sliced red chilli
- 25ml honey
- 5g chopped mint
- oil, for frying
METHOD
- Drain the halloumi, pat dry with kitchen paper and slice into 1cm thick batons.
- Thinly slice the red chilli (prepare less if you’d prefer things milder).
- Roughly chop the mint.
- Heat a drizzle of oil in a large frying pan on medium heat. Once hot, fry the halloumi until golden, turning frequently, 4-5 mins.
- Remove the pan from the heat and add the honey, half the chilli and the mint.
- Stir until the halloumi is well coated.
- Add your sticky hot honey halloumi to a sharing dish.
- Sprinkle over extra mint and chilli. Serve with crispy pizza triangles
