Another yummy way to enjoy South Africa’s favourite boerewors
INGREDIENTS
- 250g boerewors (cut into bite-size pieces)
- 1½ cups macaroni
- ½ large onion(sliced)
- 1 can tomato relish
- 1/3 cup smokey BBQ sauce
- 1 tablespoon sugar
- 2 tablespoons BBQ spice
- 2 tablespoons garlic butter
- 1 teaspoon tomato soup
- 1½ cups grated cheddar & mozzarella
- 1½ teaspoons salt
- oil for frying
- dried parsley for garnish
- water
METHOD
- Preheat oven to 200°C.
- In a pot on high heat add boiling water and salt, add the macaroni and let it cook until al dente. Once cooked, drain the pasta and set aside.
- Place the pot on medium heat and add onions & boerewors. Let the onions and wors cook for 5 to 10 minutes then add tomato relish, BBQ sauce, BBQ spice, sugar, tomato soup and garlic butter to the pot and stir. Leave on the heat uncovered for another 5 to 10 minutes stirring occasionally.
- Once the sauce has thickened, put the macaroni back into the pot and add half of the cheese. Gently mix the pasta and the sauce, transfer into a baking dish, sprinkle the remaining cheese on top and a little parsley.
- Place in the oven for 10 mins or until golden brown on top.
- Serve warm with a fresh green salad.
