Serves: 6-8 as a side
INGREDIENTS
- 500g packet cherry tomatoes, halved
- salt & pepper
- 200g bottle of french salad dressing
- 1-2 avocados, diced
- 250g ball mozzarella
- handful of basil
METHOD
- Season the tomatoes with salt and pepper in a small bowl.
- Stir through the dressing. Leave to marinate in the fridge for 20 minutes.
- Mix in the avocado and leave to marinate for 10 minutes.
- Strain the liquid (can be reserved for later use) and spoon onto a serving platter.
- Add the mozzarella and basil.
Variations:
- Use a variety of exotic cherry tomatoes.
- Soft white mozzarella, like Buffalo mozzarella or bocconcini, works best for this recipe. Or try goat’s cheese.
