ROOIBOS WITH HONEY & ROSEMARY

Quench your thirst with this fantastic Rooibos iced tea, featuring an exciting flavour profile.

Makes: 1.5 litres

INGREDIENTS

  • 8 Rooibos tea bags (floral or berry-flavoured)
  • 4 cardamom pods, crushed to expose the seeds, or 1 small cinnamon stick
  • 20ml honey
  • 1 litre boiling water
  • 500ml clear fruit juice of your choice (cranberry, berry or apple), chilled
  • 4–6 sprigs fresh rosemary
  • edible flowers for garnish (rosemary flowers or lavender)

METHOD

  1. Place the tea bags with the cardamom or cinnamon and honey in a heatproof jug. Pour over the boiling water and stir.
  2. Let the tea steep for 2–3 hours until cooled. Remove the tea bags and spices. Chill until needed.
  3. Mix the juice and rosemary into the tea. Add edible flowers if desired, then serve ice-cold with ice cubes.

PRO TIP:

For a kick: add a dash or a shot of muscadel or gin to each glass.
