Slow Cooker Peach & Waffle Pudding

Need a dessert that cooks itself while you take care of other things? This slow cooker pudding is no-fail and delicious.

Slow Cooker Peach & Waffle Pudding

Ingredients

  • 8 ready-made waffles
  • 2 x 410 g can Rhodes Quality Peach Slices, drained
  • 150 g (½ cup) dark chocolate chips
  • 3 eggs
  • 500 ml (2 cups) cream
  • 65 ml (4 Tbsp) brown sugar
  • 125 ml (½ cup) sour cream
  • 2.5 ml (½ tsp) ground cinnamon
  • 5 ml (1 tsp) vanilla essence
  • To serve: ice cream or whipped cream

Instructions

Spray the bowl of a slow cooker with non-stick spray.
Cut the waffles into large pieces and place at the bottom of the bowl.
Place the Rhodes Quality Peach Slices in a layer over the waffles.
Sprinkle the chocolate chips over the peaches.
Whisk together the eggs, cream, sugar, sour cream, cinnamon and vanilla essence.
Pour the custard over the waffles
Cook the pudding on high for 1.5 hrs on high or until the custard has set.
Serve warm with ice cream of lightly whipped cream.
