Ingredients

  • For the Salad:
  • • 2 chicken breasts, crumbed and fried until crispy, sliced
  • • 2 ripe peaches, sliced (or nectarines)
  • • 120g mixed greens (rocket, butter lettuce, baby spinach)
  • • ½ red onion, thinly sliced
  • • ½ cup crumbled feta or goat’s cheese
  • • ⅓ cup toasted almonds or pecans
  • For the Rosé Vinaigrette:
  • • ¼ cup Le Pommier Maraai Rosé
  • • 2 tablespoons olive oil
  • • 1 tablespoon apple cider vinegar
  • • 1 teaspoon dijon mustard
  • • 1 teaspoon honey
  • • salt & black pepper

Instructions

1.Whisk all ingredients together until well combined. 2.Layer greens, onion, peaches, cheese and nuts. Top with warm crispy chicken slices. 3.Drizzle with the Rosé vinaigrette just before serving.
