BEEF SOSATIES WITH PEACH & RED PEPPER

Ingredients

  • For the marinade:
  • • 2 tablespoons apricot jam or chutney
  • • 1 tablespoon mild curry powder
  • • 1 teaspoon ground coriander
  • • 1 teaspoon turmeric
  • • 1 teaspoon grated garlic
  • • 1 teaspoon grated ginger
  • • 2 tablespoons olive oil
  • • 2 tablespoons white wine vinegar or lemon juice
  • • salt and pepper
  • For the sosaties:
  • • 500g rump or sirloin steak, cut into 3 cm cubes
  • • 2 ripe peaches (or canned peach halves, drained), sliced thickly
  • • 1 large red pepper, cut into chunks
  • • 1 small red onion, quartered and separated
  • • fresh coriander or mint, for garnish

Instructions

1. In a bowl, mix all the marinade ingredients. Add the beef cubes, toss to coat, and leave to marinate for 1 hour (or overnight for best flavour).
2. Thread the beef, peach slices, red pepper, and onion pieces alternately onto soaked wooden or metal skewers.
3. Cook over medium-high heat for 8–10 minutes, turning occasionally, until the beef is nicely charred but still tender. Brush with any leftover marinade during cooking.
4. Garnish with fresh coriander or mint. Serve with yellow rice, couscous, or a crunchy slaw.
