Ingredients

  • • 80g tennis biscuits
  • • 30g margarine (70% fat)
  • • 195g Nestlé Full Cream Sweetened Condensed Milk
  • • 45g raw lemon juice
  • • 60g Nestlé Nescafé Classic
  • • canola oil (for greasing

Instructions

1. Line a mini muffin tray with mini cupcake liners and lightly grease with canola oil.
2. Place the biscuits in a resealable bag and crush them using a rolling pin. Melt the margarine and combine with the biscuit crumbs in a medium bowl. Divide the mixture between the cupcake liners, pressing down firmly to form the base of the tarts.
3. In a large mixing bowl, whisk the non-dairy creamer with 5 tablespoons of cold water until tripled in volume and medium peaks have formed. Add the Nestlé Full Cream Sweetened Condensed Milk and lemon juice, while beating for 2 more minutes or until smooth and thick.
4. Combine the Nestlé Nescafé Classic coffee granules with 1 tablespoon of hot water and mix until dissolved. Fold the prepared coffee into the creamer mixture until well blended.
5. Divide the coffee filling over the biscuit bases and garnish with a sprinkle of coffee granules.
6. Refrigerate for 5-6 hours or until set.
