AVO WAFFLES WITH SAVOURY MINCE

Ingredients

  • For the savoury mince
  • • avocado or olive oil for cooking
  • • 1 onion, chopped
  • • 2 garlic cloves, crushed
  • • 500g beef mince
  • • salt and pepper
  • • 30ml cake flour
  • • 50g packet of tomato paste
  • • 500ml beef stock
  • • 15ml soy sauce
  • • handful parsley, chopped + extra for garnish
  • For the waffles
  • • 30ml sugar
  • • 2 avocados, sliced
  • • 250ml milk
  • • 2 eggs
  • • 375ml cake flour
  • • 7.5ml baking powder

Instructions

1.For the savoury mince, heat a splash of oil in a large frying pan on medium-high and sauté the onion and garlic for 5 minutes. Add the garlic and cook for 1 minute. Keep aside.
2.Heat another splash of oil in the same pan and fry the mince for about 8 minutes or until browned. Season with salt and pepper.
3.Return the onion together with the flour and tomato paste. Add stock and soy sauce. Season with salt and pepper. Reduce heat to low, cover with a lid, and simmer for 20 minutes. Stir through parsley.
4.For the waffles, blitz together the sugar, ½ cup of the avocado, milk, ½ teaspoon salt and eggs until smooth.
5.Sift over the flour and baking powder and mix until just combined.
6.Heat a waffle maker. Grease with cooking spray and add ⅓ cup of waffle batter (spread with a spoon if you like perfectly shaped waffles), close and cook for about 3 minutes or until cooked. Repeat with the rest.
7.Serve the waffles with the mince, remaining avocado and extra parsley.
