Ingredients

  • •500g chicken livers
  • •1 onion, chopped
  • •2 cloves of garlic, minced
  • •2 tablespoons butter
  • •1 tablespoon olive oil
  • •1 teaspoon oregano
  • •1 teaspoon thyme
  • •½ teaspoon chicken spice
  • •½ teaspoon coriander
  • •½ teaspoon Rajah curry powder (flavourful and mild)
  • •½ teaspoon Rajah curry powder (mild and spicy)
  • •½ chicken stock pod
  • •a few drops of Worcestershire sauce
  • •½ cup cream
  • •1 teaspoon cream cheese
  • •pepper
  • •fresh parsley, chopped (for garnish)

Instructions

1.Start by rinsing the chicken livers under cold water and patting them dry with paper towels. Remove any membranes or connective tissues, and cut the livers into bite-sized pieces.
2.Heat the butter and olive oil in a large skillet over medium heat.
3.Fry the chicken liver (in batches) until cooked and set aside.
4.Add the chopped onion and minced garlic, spices, herbs and sauté until the onion becomes translucent and fragrant.
5.Add chicken stock, cream and cream cheese. Stir and let it simmer for 2–3 minutes.
6.Add back the cooked chicken liver, season with pepper, and let it cook for about 5 minutes.
7.Garnish with freshly chopped parsley.
8.Serve the chicken livers hot as an appetiser or a main dish. They can be enjoyed on their own or with crusty bread or rice.
