LAMB BURGERS WITH ROSE HARISSA TZATZIKI

Ingredients

  • For the lamb patties:
  • • 500g lamb mince
  • • 1 small red onion, finely grated or minced
  • • 1 garlic clove, crushed
  • • 1 teaspoon ground cumin
  • • 1 teaspoon ground coriander
  • • ½ teaspoon cinnamon (optional)
  • • salt and black pepper
  • • chopped fresh parsley or mint
  • • 1–2 teaspoons rose harissa inside the mix for an extra kick (optional)
  • For the rose harissa tzatziki:
  • • 1 cup Greek-style yoghurt
  • • ½ cup grated cucumber (squeezed dry)
  • • 1 small garlic clove, minced
  • • 1–2 teaspoons rose harissa
  • • 1 teaspoon lemon juice or zest
  • • salt, to taste
  • • chopped mint or dill (optional)
  • • swirl of harissa for serving (optional)
  • For assembly:
  • • soft brioche or flatbread folded like a pita
  • • baby spinach or rocket
  • • pickled red onions or shaved cucumber ribbons
  • • sliced tomatoes
  • • crumbled feta or thin slice of halloumi
  • • pomegranate arils (optional

Instructions

1. Mix all lamb patty ingredients until just combined, then form into 4 patties.
2. Chill for 15–20 minutes to firm up.
3. Braai or pan-fry for 3–4 minutes per side, until golden and just cooked through.
4. Mix all rose harissa tzatziki ingredients until just combined, then set aside.
5. Assemble the burger on soft brioche or flatbread. Top your lamb patty with rose harissa tzatziki, baby spinach or rocket, pickled red onions or shaved cucumber ribbons, and feta or halloumi. Finish with pomegranate arils for a sweet crunch.
