Ingredients

  • •15ml brandy
  • •5ml fresh lemon juice
  • •5ml Maraschino liqueur
  • •50g fresh papaya purée (very smooth, passed through a fine sieve)
  • •1 cup of ice
  • •45 ml sparkling wine
  • •a curl of lemon rind (one whole piece of zest)

Instructions

1.Combine all the ingredients, except the sparkling wine, in a cocktail shaker with plenty of ice.
2.Shake the mixture fairly forcefully to cool it down as quickly as possible.
3.Pour into coupe glasses, top up with the bubbly and decorate with the lemon rind.
