PARMESAN SWEET POTATO FRIES WITH MINT AIOLI

Ingredients

  • INGREDIENTS
  • For sweet potatoes
  • • olive oil, for roasting
  • • 80g parmesan
  • • 4 large sweet potatoes, cut into wedges
  • • 2 teaspoons garam masala
  • • salt and pepper
  • For the aioli
  • • 80ml mayonnaise
  • • 80ml plain yoghurt
  • • 1 garlic clove, roasted
  • • handful of mint and rocket
  • • 30-45ml water
  • • 1ml lemon juice
  • • salt and black pepper, to taste

Instructions

METHOD
1. Preheat your oven to 200°C and prepare a baking sheet. Scatter the parmesan over the surface.
2. Cover the sweet potatoes with your seasoning and oil, then place them cut side down onto the parmesan. Bake for 40-45 minutes.
3. Add the aioli ingredients to a blender and blend until smooth. Adjust the seasoning as desired.
4. Serve and enjoy.
