PERI PERI PRAWNS ON THE BRAAI

Ingredients

  • Prawns
  • • 20 to 30 king-sized prawns with shells on
  • Sauce
  • • ½ red onion
  • • 2 x red peppers
  • • 6 cloves of garlic
  • • 1-inch fresh ginger
  • • 5 red chillies
  • • 3 tablespoons white wine vinegar
  • • 1 ½ tablespoons smoked paprika
  • • 1 ½ tablespoons brown sugar
  • • 1 tablespoon dried oreganum
  • • juice of 1 lemon

Instructions

For the sauce

1.Mix everything and blend with a food processor until it forms a paste.
2.Add 1 cup of olive oil to the paste and taste. Add more oil if it is too strong.

For the prawns

1.Butterfly the prawns and baste with homemade sauce.
2.Place tin foil at the bottom of your braai grid and put the prawns on it with the shell facing the foil.
3.Baste generously with your peri peri sauce and wait for the coals to be ready.
4.On medium coals at a medium height, place the prawns face down onto the heat for 5 minutes.
5.Turn over and baste with melted butter. Repeat the process once more until your prawns are cooked.
